Ingredients and Directions for Cake:
1 cup butter
2 cups sugar
4 eggs
1 teaspoon vanilla
1 teaspoon of lime zest
2 tablespoon of fresh lime juice
1/2 teaspoon strawberry extract
1 1/2 teaspoon of red food color
1/2 teaspoon baking powder
1 teaspoon soda
1/2 teaspoon salt
1/3 cup chopped strawberries
3/4 cup tequila blanco
3 cups all purpose flour(cake flour is also great)
1/4 cup buttermilk

Cream shortening and sugar in mixer until light and fluffy. Add eggs one at a time beating well. Mix buttermilk ,tequila, lime juice, extracts and red food coloring. Sift flour, baking powder, soda, and salt. alternate flour and buttermilk into butter mixture;mix well after each addition. fold in strawberries. Grease and flour 3, 9in pans; add batter and bake 35-40 minutes.

Ingredients and Directions for Frosting:
1 8oz cream cheese (soften)
4 cups confectioners sugar
1 teaspoon lime juice
1 teaspoon strawberry extract
2 tablespoons tequila

Mix well until smooth; in separate bowl beat
2 cups heavy whipping cream until stiff peaks form
fold whipped cream into cream cheese mixture

Ingredients and Directions for Strawberry Jam:
1 quart fresh strawberries
1/8 cup balsamic vinegar
1/4 cup sugar

Bring to slow boil ; then turn down to a slow simmer until strawberries or soft ; let cool completely ;strain. I used the liquid from straining as my drizzle. Once cooled it will thicken.

Ingredients and Directions for Glaze:
1/4 cup lime juice
2 tables lime zest
1 stick butter
1 cup sugar

Bring to boil; lower to simmer stirring frequently until mixture coats the spoon. Remove from heat. Add 1/2 cup tequila; soaks each cake layer
assemble cake by frosting sides, between layers with cream cheese mixture.
