Gotta love it! Two desserts in one! Keylime Cheesecake Cake! đź‘ŤđźŹľÂ Â
Cake Ingredients:Â 2 cups sifted all purpose flour 1 1/3 cup of sugar 1/2 tsp salt 1 tsp baking powder 1 tsp baking soda 3 oz pkg. lime gelatin 5 room temperature eggs 1 1/2 vegetable oil 3/4 cup orange juice 1 tbsp lemon juice 1/2 cup key lime juice 1 tsp vanilla extract Â
Preheat oven to 350 degrees,
use flour spray to coat two 9 inch pans.
Mix all dry ingredients together.
Mix all wet ingredients together.
Gradually add dry ingredients to wet ingredients.
Evenly divide mixture into cake pans and bake until toothpick comes out clean.
Cheesecake Ingredients: 3 pkgs softened cream cheese 1 1/4 cups sugar 1 tsp vanilla extract 1 tbsp lemon juice 1 tbsp cornstarch 1/2 c sour cream 3 room temperature eggsÂ
Mix cream cheese and sugar together.
Add vanilla extract and lemon juice.
Mix in sour cream and cornstarch.
Beat in eggs one at a time. Mix until combined.
Line one 9 inch cake pan with parchment paper.
Bake at 350 degrees until middle has a little jiggle.
Allow to cool for an hour. Refrigerate overnight.Â
Assemble and Icing: Using your favorite buttercream icing recipe add keylime juice as desired. Spread the icing between the three layers, with the cheesecake layer being in the middle. Spread the remaining icing all over the top and sides. Garnishment: Add crushed Graham crackers crumbs to the sides of the assembled cake. Top cake with white chocolate covered strawberries, lime slices and graham cracker crumbs, if desired.
