2 1/2 cups of All purpose flour
2cups of sugar
1 tbsp Baking Soda
1 tsp of salt
1 tsp Cocoa
1 1/2 cup oil
1 cup Buttermilk
2 large eggs
1 1/2 tsp of Vanillia Flavor
2 tbsp of Red food color
1 tsp of white distilled vinegar
Ingredients for Cream Cheese Frosting:
2 8oz cream cheese
4 cups of Powder sugar
2 sticks of unsalted butter
1 tsp of Vanilla flavor
In a larger bowl, you will combine all dry ingredients. You must sift these dry ingredients 2 times. Note: I sift 3 times to make it even more moist. Also I add another 1/2 cups of sugar. No complaints by customers they love it.
In another bowl, you will combine all wet ingredients together until blended well.
Take the wet ingredients (have buttermilk and eggs at room temperature) and pour into the dry ingredients. Stir with a whisk until blended well. I’m old fashioned.
Use 2 round 9 inch cake pans. Grease cake pans and lightly flour. Bake on 350 for about 30mins.
Directions for Frosting:
Have Cream Cheese and Butter at room temperature. Blend Cream Cheese and butter together with hand mixer. Add Vanilla Flavor and sift in your powdered sugar. Continue to blend. If icing is not sweet enough, add a little more powdered sugar. After icing cake, add your Pecans. Spread all over the cake including the sides.
