Ingredients:
1 cup light brown Domino Sugar
1 cup granulated Domino Sugar
2 eggs, room temperature and slightly beaten
½ cup butter, melted and cooled (equivalent to 1 stick)
½ cup of vegetable oil
2 cups of self-rising flour, unsifted (I prefer White Lily)
1/8 tsp. of salt (a pinch)
1 tsp. vanilla extract or bean paste
1 tsp. old fashioned molasses
1 cup chopped pecans

Directions:
Preheat oven to 350ºF. Flour and oil (I use Baker’s Joy) a 9 x 13 baking dish. In a large bowl, whisk together the wet ingredients {sugars, eggs, melted butter, oil, molasses and vanilla} until well combined. Using a wooden spoon, gently incorporate the self-rising flour and salt just until all ingredients are combined. Do not over mix the batter. Stir in pecans. Pour batter into prepared 9 x 13 baking dish and bake for 35-40 minutes until golden brown. Cool completely in pan. Cut into squares and garnish with confectioners’ sugar if desired.
