Ingredients for Filling:
1 cup sugar
1 stick butter
4 large eggs
36 oz (5 whole white potatoes) boiled, drained & pureed
1 pack JELL-O vanilla pudding
1/2 cup carnation milk
2 tsp allspice
2 tsp apple spice
3 tsp cinnamon
1 pack graham crackers
Directions for Filling:
• Once potatoes are cooked fully, while still hot, add sugar and pudding pack, 1/2 stick of butter, puree to the consistency a little shy of baby food.
• Add spices (leaving 1 tsp of cinnamon for the graham cracker crust).
• Add eggs, one at a time. Add milk, mix well.
Ingredients for Crust:
1 pack graham crackers
1/2 stick butter (melted)
1 tsp cinnamon
Directions for Crust:
• In food processor, add graham crackers and process to crumbs. Add cinnamon and slowly add melted butter. Once combined, pour out on parchment paper.
Directions for Pie:
• Place crumbs in pie pan and flatten (you can use the bottom of the measuring cup). Make sure the crumbs are to the top of the pie ring. Put pie crust in freezer for 20 minutes.
• Remove and add filling. Bake at 325 degrees for 25-30 minutes.
• Remove from oven (pie should jiggle a bit in the middle, that’s fine) and let cool for at least a hour to set.
