Ingredients for Key Lime Cupcakes:
1 3/4 cup all purpose flour
1/4 cake flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup sour cream
1 stick unsalted butter at room temperature
1/2 cup granulated sugar
1/4 cup light brown sugar
2 large eggs at room temperature
1 teaspoon vanilla extract
1/2 teaspoon lime extract
Lime zest from two key limes
Directions for Key Lime Cupcakes:
• Preheat oven to 350° Line cupcake pan with cupcake wrappers
• Sift flour, salt and baking powder together. Set aside.
• Cream butter and sugars together until light and fluffy.
• Add one egg at a time making sure fully incorporated into sugar mixture. • Add flour mixture a third at a time alternating with sour cream, ending with flour.
• Add vanilla, lime and lime zest.
• Evenly distribute batter between cupcake liners.
• Bake at 350 for 15-20 depending on your oven.
• Allow to cool before icing.
Ingredients for Blackberry Buttercream:
1 pint of blackberries fresh or 2 cups frozen
1/4 brown sugar
Zest of one lemon
Juice of zested lemon
2 sticks unsalted butter at room temperature
3 cups powdered sugar
1 teaspoon vanilla extract
Directions for Blackberry Buttercream:
• Add blackberries, brown sugar, zest and juice to medium saucepan over medium heat. Allow to simmer being sure to watch closely until berries have cooked down and thickened.
• Once the berries have reduced by half, pour into a fine mesh strainer.
• Press berries through with a wooden spoon. Discard solids left in strainer. Allow the blackberry syrup to cool completely.
• Beat butter in stand mixer until pale in color.
• Carefully add powdered sugar a little at a time being sure to fully incorporate before adding more.
• Once all sugar has been added buttercream will be still, add a little of the blackberry syrup a little at a time until desired consistency is reached.
• Add vanilla and it’s ready to be used.
