Alberta Osbey’s Lemon Strawberry Poke Cake is looking mighty fine! FULL RECIPE below.

Ingredients:
1 box instant lemon pudding mix
Box lemon cake mix
3 eggs
1 cup water
1/3 cup oil
1 package strawberry JELL-O mix
3 packages of cream cheese softened
Large container of COOL WHIP
1/4 cup lemon juice
1 1/2 cups sugar
1 tbs vanilla extract
1 tbs lemon extract
Strawberry glaze
Fresh strawberries and lemons for garnish

Directions:
In a bowl mix cake mix, eggs, water, oil, pudding mix blend till creamy. Then grease two 9in pans; pour the batter in both pans. Bake in the oven 350 for 25 to 30 mins or till knife comes clean when you poke it. Let cake cool, then make your jello mix. Follow the directions on the box. Take your cake and poke holes all through out the cake. Pour the jello all over the cakes. Place the cakes in the refrigerator. Cool for 3 hours. In another bowl, take your cream cheese, sugar, lemon juice, flavoring, and mix till creamy. Add your cool whip and fold together till well mixed. Frost your cakes, then garnish with the strawberries and lemons.
