Iris Warren’s 7UP Pound Cake is looking too good! I can eat this for breakfast, right? ???? FULL RECIPE below.
3 Sticks of butter (Softened)
3 Cups of sugar (White)
5 Eggs (Room Temp.)
2 tablespoons of Lemon Juice
1 1/2 Teaspoon of Pure Vanilla Extract
3 Cups of Cake Flour
3/4 Cups of 7UP soda
(1) 8oz. package of Philadelphia Cream Cheese
1/2 Cup of buttermilk
1 1/2 Cups of Confectioners Sugar
1 tablespoon lemon juice
2 tablespoon 7UP soda
1. Preheat oven to 350. Grease and flour one 10-in tubed fluted pan very lightly with Crisco and bleached white flour.
2. In a bowl, cream butter, cream cheese, buttermilk and sugar until fluffy, add eggs (one at a time). Beat in lemon juice and vanilla. Pour 1 and ½ cup of flour alternately with the 3/4 cups of 7UP.
3.Pour batter into pan, bake for 75 minutes. Cool completely,
4. For Glaze, mix in a bowl all ingredients and drizzle over cake
