Every week, I will be sharing one of my favorite cooking or baking recipes. This week, it’s Banana Pecan Ice Cream. Watch Rushion’s Kitchen on AIB Network Georgia on Comcast Cable (Channel 295) and AT&T Uverse (Channel 6) as well as the AIB YouTube channel. New shows premiere every Thursday at 9:30 PM ET.
2½ cups heavy cream
1 (14-ounce) can sweetened condensed milk
2 large ripe bananas, peeled and mashed with a fork
1 teaspoon vanilla
Pinch of salt (Do not use if the Pecans are Salted)
1 cup chopped Stuckey’s Toasted Pecans
Place bananas in a large bowl and mash using a fork. Add condensed milk, vanilla and salt, and stir together.
In a separate large bowl, whip cream with electric mixer until medium peaks form. Remove about ¼ of the whipped cream and, using a rubber spatula, fold into banana mixture. Then add banana mixture to the bowl of whipped cream and fold to combine.
Place mixture in a loaf pan, cover with plastic wrap and chill for about 2 hours. Remove and stir in chopped Stuckey’s Toasted Pecans (You can also use your favorite Pecans) and mix inside the ice cream. Place plastic wrap over, and chill for 4 more hours or overnight.
