Every week, I will be sharing one of my favorite cooking or baking recipes. This week, it’s Banana Pecan Ice Cream. Ingredients:
2½ cups heavy cream
1 (14-ounce) can sweetened condensed milk
2 large ripe bananas, peeled and mashed with a fork
1 teaspoon vanilla
Pinch of salt (Do not use if the Pecans are Salted)
1 cup chopped Stuckey’s Toasted Pecans

Instructions:
Place bananas in a large bowl and mash using a fork. Add condensed milk, vanilla and salt, and stir together.
In a separate large bowl, whip cream with electric mixer until medium peaks form. Remove about ¼ of the whipped cream and, using a rubber spatula, fold into banana mixture. Then add banana mixture to the bowl of whipped cream and fold to combine.
Place mixture in a loaf pan, cover with plastic wrap and chill for about 2 hours. Remove and stir in chopped Stuckey’s Toasted Pecans (You can also use your favorite Pecans) and mix inside the ice cream. Place plastic wrap over, and chill for 4 more hours or overnight.
Makes 1 quart
