Now y’all puttin’ soda in pound cake?! C’mon now! This 7UP Pound Cake recipe from my Facebook fan Loretta Haymon has me droolin’!
Ingredients:
6 Eggs
3 Cups sugar
3 Cups Swans Down Cake Flour
3/4 Cups 7-UP soda
3 Sticks of butter
1 Teaspoon vanilla extract
1 Teaspoon lemon extract
1 Teaspoon almond (optional)
Glaze :
1-1/2 Cups confectioners sugar
1 Tablespoon lemon juice
1 to 2 Tablespoons 7UP soda
Directions:
Bring all ingredients to room temperature. Preheat oven to 350 degrees. Grease and flour a bundt pan and set aside. In large bowl, cream butter and sugar until light and fluffy. Add eggs one at a time, alternating with flour beating well after each addition. Add 7-UP, vanilla, lemon extract and almond extract and cream until smooth. Pour mixture into bundt pan and bake at 350 degrees for 1 hour and 10-15 minutes. Cake is done when toothpick inserted in middle comes out clean. Let cake sit in pan until pan. Remove from pan and place on a cooling rack until completely cooled. For glaze, in a small bowl, mix confectioners sugar, lemon juice and enough 7-UP to reach desired consistency. If desired, stir in 1/2 teaspoon grated lemon peel. Drizzle over cake. ENJOY ????
