Cake Ingredients:
3 cups all purpose flour
1 cup light brown sugar
2 cups granulated sugar
1 cup butter (2 sticks or 8 oz)
1 cup buttermilk
6 eggs
2 tsp vanilla extract
1 cup sweet potato purée
1 tsp cinnamon
Directions:
Preheat oven to 325 degrees
1. Cream butter and sugars until fluffy approximately 3 min.
2. Add eggs 1 at a time.
3. Add vanilla.
4. Add sweet potato purée.
5. Add flour alternating with butter milk. Beginning and ending with flour.
6. Place in bundt or pound cake pan and bake for 1 hour. Remove from pan and cook completely.
Ingredients for Pecan praline topping:
1 cup light brown sugar
1/4 cup heavy cream
1/2 stick butter
1 cup toasted pecans
Directions:
1. Place first three ingredients in a small saucepan and cook until the sugar is dissolved.
2. Add pecans and let sit for 5 minuets.
3. Pour mixture over Cake and serve immediately.
