1 can sweet condensed milk
3 egg yolks
Zest of 2 lemons
1/2 cup fresh lemon juice
1 pkg Keebler shortbread cookies (crushed)
3/4 stick melted unsalted butter
• Mix together condensed milk, egg yolks, lemon zest, and lemon juice to make a custard.
• In a separate bowl, make your crust by mixing together your crushed shortbread cookies and butter and press mixture down firmly into 12 cupcake liners.
• Bake crust at 350 degrees for 5 minutes. After crust has set, pour your lemon custard mixture over the gram cracker crust and bake at 325 degrees for 15 minutes.
• After baking, let lemon bites cool completely in refrigerator and then top with whip cream or marshmallow topping. Enjoy!
