Lemme see y’all’s favorite German Chocolate Cake recipes! Here is a great one from my Facebook fan Carmella Alexander from Atlanta, GA!
Cake Ingredients:
2 cups of all purpose flour
1 tsp of baking soda
1/4 tsp of salt
4 ounces of Baker’s German Sweet chocolate
1 cup of butter
2 cups of sugar
1 tsp of vanilla extract
1 cup of Buttermilk
4 eggs
Coconut Pecan Center Icing Ingredients:
3 egg yolks
1 cup of evaporated milk
1 tsp of vanilla extract
1 cup of sugar
1 stick of butter
1 cup of pecans
1 1/3 cup of sweet shredded coconut
Cake Directions:
Preheat oven to 325°. Flour and grease and flour two 3 9′ round pans. Separate eggs. Beat egg whites with whisk attachment on high speed until it has soft peaks set aside. Sift your flour, salt, and baking soda set aside. I prefer melting my chopped German chocolate in 30 second intervals until melted or you could place the chopped chocolate into a bowl pour 1/2 cup of hot boiling water onto it. Cream butter and sugar together until light and fluffy. Add egg yolks one at a time until combined. Pour in chocolate while mixing. Add vanilla. Add flour mixture alternately with buttermilk about 1/3 at a time until combined and smooth. Fold in egg whites gently. Divide evenly into pans and insert a toothpick into center comes out clean. Let cool.
Coconut Pecan Icing Directions:
Whisk egg yolks, milk, and vanilla together In a large sauce pan until eggs are combined. Add butter and sugar and turn pot over medium heat stir constantly for about 12 mins or until thickened and golden. Remove from heat and let cool. Spread icing evenly throughout the layers. I like to cover my cakes on the outside with chocolate frosting.
Chocolate Topping Icing Ingredients:
1 cup butter (2 sticks), softened, room temperature
½ tablespoon heavy whipping cream
1 teaspoon real vanilla extract
½ cup semi-sweet chocolate chips, melted and cooled
½ cup unsweetened cocoa powder, sifted
2½ cups powdered sugar, sifted (spoon into measuring cup to measure)
pinch of salt
Chocolate Topping Icing Instructions:
In a large bowl, cream butter until fluffy. Add in heavy cream and mix until light and fluffy. Mix in vanilla extract. Mix in melted chocolate chips. Mix in cocoa powder and powdered sugar until frosting is light, fluffy and whipped. Stir in salt. Ice your cake! Enjoy!
