Ingredients for Cookie Dough:
2 ¼ cup All-Purpose Flour
1 teaspoon Baking Soda
3 teaspoons Cinnamon
½ teaspoon Ginger
½ teaspoon Nutmeg
½ teaspoon Salt
1 cup Butter
1 cup Brown Sugar
½ cup Cane Sugar
2 teaspoons Dr. Shica’s Vanilla Powder or Vanilla Extract
2 eggs
1 Cup Shredded Carrots
2 Cups Oatmeal (Quick Oats)
Optional- Pecans & extra Grated Carrots to decorate icing on top of cookies

Ingredients for Cream Cheese Icing:
4oz Cream Cheese
½ stick of butter (4 Tablespoons)
2 teaspoons Dr. Shica’s Vanilla Powder or Vanilla Extract
2 cups Powdered Sugar

Directions for Carrot Cake Cookies:
1. Prepare Dry Ingredients/Flour Mixture- Combine All-Purpose Flour, Baking Soda, Salt, Cinnamon, Nutmeg and Ginger. Mix and set aside.
2. In a bowl, use a mixer to blend Sugar, Brown Sugar, Butter and Dr. Shica’s Vanilla Powder or Vanilla Extract. Blend until well mixed.
3. Add eggs 1 at a time
4. After blended well, add in flour mixture (a little at a time) until well mixed
5. Add in Shredded Carrots (a little at a time)
6. Add Oats and mix well
7. Scoop the dough onto a greased cookie sheet (for best results place cookie dough on parchment paper)
8. Slightly mash down the cookies before baking. Bake at 375 degrees for 10-12 minutes (depends on your oven temp). Average time to bake is 12 minutes.

Directions for Cream Cheese Icing:
1. Blend Cream Cheese and Butter until well blended
2. Add Powdered Sugar (a little at a time). Continue to mix until well blended
3. Add 2 teaspoons Dr. Shica’s Vanilla Powder or Vanilla Extract. Continue to blend.
Decorate Cookies- Take a spoonful of Cream Cheese Icing and smooth it on top of each cookie.
Optional- Sprinkle the top of each cookie with shredded carrots and pecans.
