1 garlic clove
1/4 cup coconut oil
1 cup dried bread crumbs
1/3 cup parmesan cheese
2 lemons/lemon zest
2 tbsp fresh parsley
1 tsp salt
1/8 tsp ground black pepper
1 (4lb) chicken
Preheat oven to 350 degrees. Combine crushed garlic with coconut oil. Cook one hour.
Ingredients for Fig Watermelon Salad:
3/4 cup red onion
2 tbsp lime juice
1 1/2 quarts seeded watermelon
3/4 cup feta cheese
1/2 pip pitted black olives
1/4 cup chopped fresh mint
5 tbsp fig balsamic vinegar
Place onions in a small bowl with lime juice. Let stand for 12 minutes.
