I’ve got to meet Lana Shannon’s grandmother, because “Grandma’s Carrot Cake” is looking too good! ???? FULL RECIPE below.

3/4 cup White Domino Sugar
1/2 cup Light Brown Domino Sugar 
1 1/2 cups All-Purpose Flour
1/2 teaspoon Salt
1 teaspoon Baking Powder
1 teaspoon Baking Soda
1 teaspoon Nutmeg
1 1/2 teaspoons Cinnamon
3 Eggs
1 cup Vegetable Oil
1 1/2 teaspoons Vanilla
2 cups Shredded Carrots
1/2 cup Chopped Walnuts

Icing Ingredients:
8 oz Cream Cheese
1/4 cup Margarine
1 teaspoon Vanilla
3 cups Powdered Sugar
1/2 cups Chopped Walnuts

Pre-heat oven to 350 degrees
Mix dry ingredients, set aside.
Separate Eggs in two bowls.
Mix the Egg Yolks until creamy.
Add the oil, vanilla, carrots, and walnuts. Set aside.
Mix Egg Whites and fold into Egg Yolk/wet mixture.
Fold in the Dry ingredients.
Pour evenly into 3 prepared (grease and flour) 9-inch cake pans
Bake for 45 minutes.
Lay on a cooling rack.

Directions for Icing:
Beat Cream Cheese, Vanilla, and Butter until creamy.
Add Domino Powdered Sugar
Spread Icing on cooled Cakes.
Sprinkle sides and top w/ Chopped Walnuts
