Every week, I will be sharing one of my favorite cooking or baking recipes. This week, it’s Nilla Wafer Pecan Coconut Cake. Ingredients:

6 large eggs

2 1/2 cups Nilla Wafers

2 1/4 cups granulated Domino Sugar

2 sticks Land O’Lakes unsalted butter

1 1/3 cups Diamond Nuts Chopped Pecans

1/2 cup Horizon Organic Milk

1 cup Baker’s sweetened coconut

 

Directions:

Bring your eggs and milk to room temperature. Prepare your pan by lining or coating it with cooking spray. Preheat your oven to 300 degrees. In a food processor, add your nilla wafers and process into fine crumbs. In a large mixing bowl, add your eggs, milk, sugar, pecans, coconut, and processed nilla wafers. Melt your two sticks of butter and add to mixing bowl. Mix all ingredients in mixing bowl on low for thirty seconds. Then mix on medium for another 30 seconds or until well combined. Pour your batter into your bundt pan. Bake your cake for an hour and 30 minutes on 300 degrees or until cake tester comes out clean. Cool for 20 minutes in pan before moving to a wire rack.
