Ingredients:
1½ cups bananas, mashed
2 teaspoons fresh lemon juice
3 cups all-purpose flour
1½ teaspoons baking soda
½ teaspoon salt
12 tablespoons butter (1½ sticks), room temperature
2 cups granulated sugar
¼ cup brown sugar, packed
3 eggs
2 teaspoons vanilla extract
1½ cups buttermilk

Banana Cake Directions:
Preheat oven to 275 F.Generously grease and lightly flour 2 (9 inch) round cake pans. Set aside.In a small bowl combine bananas and lemon juice. Set aside.In a medium bowl, whisk together flour, baking soda and salt. Set aside.In a large bowl, cream together butter, granulated sugar, brown sugar, eggs & vanilla extract.Mix the dry ingredients into the wet ingredients, alternating with the buttermilk.Fold in bananas.Pour batter evenly into the prepared pans.Bake for 35-40 minutes. Let cool for about an hour.

Banana Cheesecake Ingredients:
1 1/2 cups finely crushed vanilla wafers
1/4 cup butter, melted
1 tablespoon lemon juice
2 tablespoons light brown sugar
3 (8-oz.) packages cream cheese, softened
1 cup granulated sugar
3 large eggs
2 ripe bananas
2 teaspoons vanilla extract

Banana Cheesecake Directions:
Preheat oven to 350°. Stir together first 2 ingredients in a small bowl until well blended. Line 9-inch pan with parchment paper press mixture onto bottom of the springform pan.pressing gently into crust to secure. Bake 10 minutes. Cool completely on a wire rack (about 30 minutes). Using a blender mix remaining ingredients until blended. Pour batter into cooled springform pan (Bake 40 minutes).

Cream Cheese Frosting Ingredients:
1/2 cup unsalted butter, softened
1 package (8 oz) cream cheese, softened
1 teaspoon vanilla
3 cups powdered sugar, plus more as needed

Cream Cheese Frosting Directions:
In large bowl, beat softened butter and cream cheese with electric mixer on medium speed 2 to 3 minutes, scraping bowl occasionally, until smooth and creamy. Stir in vanilla, then stir in powdered sugar. Add more powdered sugar as needed until frosting is a thick spreadable consistency.

Directions for building the cake:
Slice tops off banana cake. Remove Cheesecake from the pan. Like a sandwich, place cheesecake between banana cake. Using a quarter of the icing, spread around outside perimeter and top of the cake. Set aside 5 vanilla wafers. Using the remaining wafers decorate the sides of the cake. Put remaining icing in piping bag then make 5 mounds on top of the cake. Place remaining 5 wafers on each mound.
